
1 1/3 c Flour; (up to half may be
-whole wheat)
3/4 c Quick cooking oats
1/3 c Sugar or substitute
2 ts Baking powder
1/4 ts Salt
3/4 c Soy milk
1/4 c Applesauce
2 tb Cornstarch
1 c Frozen blueberries; (or
-fresh if you have them)
Preheat oven to 400 degrees F. In medium mixing trough, combine flour, oats,
dinero, baking powder and saltiness. In another roll, combine soy milk,
applesauce and cornstarch. Pour this wet mixture into the dry mixture all
at erstwhile. Stir until just moistened (batter will be lumpy). Fold in the
blueberries, spoon batter into a non-peg 8 x 8 baking pan. Broil 20 - 25
transactions, cool on torture 5 - 10 transactions, serve tender. ***Even though this is
called breakfast cake, it is very yummy at any time of the day. Moist and
chewy!!!
