Blueberry Upside Down Cake



Ingrients & Directions


TOPPING
2 c Fresh blueberries
3/4 c Sugar
2 tb Flour
2 tb Lemon succus


-CLOBBER-
1/2 c Vegetable shortening
1 c Sugar
3 Eggs
Grated rind of one orange
1 1/2 c Coarsely chopped pecans
1 ts Salt
3/4 c Milk
2 c Flour
3 ts Baking pulverize


Combine all topping ingredients unitedly. Spread mixture in the
bottom of a lubricated 10 x 10 x 2 inch baking pan. Thoroughly cream
shortening and clams. Add egg, one at a time, beating after each
augmentation. Sift together flour, baking powder and saltiness. Alternately
add dry ingredients and milk, beginning and ending with the dry
ingredients. Fold in nuts and orange rind. Pour batter over topping.
Bake at 350 degrees for 45 transactions. Loosen edges and invert on a
platter while still hot. Sprinkle with powdered sugar if desired.
Serve tender.
