1/2 lb Lump Crabmeat
1/4 c Onion; minced
1/4 c Red Peppercorn; minced
2 tb Jerk Spice
2 ts Honey
1/2 c Mayonnaise
1 c Fresh Bread Crumbs
3 tb Butter
Sweet Lime Salsa; to answer
In a small bowlful, mix all the ingredients except the salsa and the butter to
shape 12 crabcakes. Cook the crabcakes in the butter, over moderate heat,
until golden brown on both sides. Serve with sweet lime salsa or otc
sauce.
