Cheese Pancakes



Ingrients & Directions


2 Egg yolks
1/2 ts Salt
2 tb Sugar
2 c Cottage cheeseflower -- drained
1 c Flour -- sifted
2 Egg whites -- stiffly
Beaten
Butter -- for sauteing


Beat the egg yolks and sugar unitedly. Stir in the cottage cheese and
flour and fold in the egg whites. Heat enough butter to cover the
bottom of a skillet around 1/4-edge. Drop the batter into it by the
tablespoon. Fry until browned on both sides. Serve hot, garnished
with sour bat and jelly. Serves 4.
