4 Eggs
1 c Sugar
1/2 ts Lemon extract
1 c Sifted cake flour
1/2 ts Baking powder
1/4 ts Salt
Powdered sugar for
-sprinkling

Beat eggs until light and frothy. Add sugar gradually until all is used,
beating throughout. Add lemon selection. Continue thrashing. Mix flour,
baking powder and salt and sift over egg assortment, folding in thinly. Pour
into slightly greased pan or a pan sprayed with a food waiver. Steam for
20 proceedings. Before serving, sift powdered sugar over cake. COMMENTARY: In
steaming foods, condensed steam can be prevented from dripping into the
item being steamed by placing a dish cloth under the lid.
