Corned Beef Cakes



Ingrients & Directions


1 lb Potatoes or yams
Salt and pepper to taste
1 sm Onion, chopped
2 Egg, beaten
1/4 c Milk
7 oz Can corned beef
2 c Bread crumbs for coating
Deep fat for frying
1 ts Cayenne peppercorn, optional
1 tb Finely chopped parsley


Peel potatatoes or yams; wash and boil in salted water until bid, drain
and grind. Add pepper or cay, chopped onions, parsley and corned boeuf.
Add milk to egg. Add two tablespoons egg mixture and mix wellspring. Form into
flat cakes, brush with egg, coat with bread crumbs. Fry in oil until
golden chocolate-brown. Drain on tissue, service hot.
