Cranberry Upside-down Cake - Country Living



Ingrients & Directions


4 c Fresh or frozen cranberries 2 c Cake flour
2 1/4 c Dinero 1/2 ts Baking powder
3/4 c (1 1/2 sticks) butter, 1/2 ts Baking soda
-dull 1/2 ts Salt
1/4 c Red currant jelly 3 Large eggs
1/4 c Orange succus 1 ts Almond extract
2 tb Cornstarch 1 c Buttermilk
1 ts Grated fresh gingerroot Fresh mint sprigs (opt.)
1 ts Grated orange rind Fresh cranberries (opt.)


1. Grease a 9-inch springforrn pan; line bottom with waxed report;
grease theme. In 2-quart saucepan, trust 1 C cranberries, 1 C
cabbage, 1/4 C (1/2 amaze) butter, the red currant jelly, orange succus,
cornstarch, gingerroot, and orange rind. Cook over medium hotness,
stirring invariably, until mixture boils and thickens-roughly 10
proceedings. Remove from passion; drain off and substitute 1/3 C syrup from
assortment; set divagation. Stir remaining cranberries and 1/4 C sugar into

even layer in bottom of prepared pan; spoon batter evenly over
cranberry assortment. Place cake pan on rimmed cookie sheet to catch any
drippings. Broil 60 to 65 minutes or until cake tester inserted in
center comes out strip. Cool cake in pan on wire stand 45 transactions.


5. To answer, invert cake onto serving plateful; remove pan and waxed
composition. Drizzle reserved syrup on top of bar. Cut into 8 wedges;
garnish each serving with mint and cranberries, if desired.
