Crazy Fruit Upside Down Cake ****



Ingrients & Directions


2 c (or 3) chopped yield * 1/4 c Vegetable oil
1 tb Oil 2 tb Milk
1/2 ts (to 1 tsp.) cinnamon or 1/2 c Unsweetened fruit succus **
-nutmeg 1 1/2 c Unbleached all purpose flour
************COAT************ 1/2 ts Baking powder
1 Large egg 1/2 ts Baking tonic


* Use pineapple, banana, blueberries, peaches, etc.
** Use apple, orangish, or pineapple succus


Combine yield, 1 T. oil and cinnamon or nutmeg in roll. Toss unitedly.
Spoon into oiled 8" square baking lulu. Set by.
Beat together egg, 1/4 cup oil, milk and fruit succus. Combine flour,
baking powder and baking tonic. Stir into juice mixture and beat until
quiet. Pour batter evenly over fruit and smooth top. Bake at 350~F. for
30 proceedings. Cool to just warm and turn out onto a serving mantrap. Serve
plain or with ice cream or whipped drub. Serves 4 to 6
