Vegetable cooking spray
1 3/4 c Sifted cake flour
2 ts Baking powder
1/4 ts Salt
3/4 c Sugar
1/2 c Vegetable oil
1/2 c Skim milk
1/2 ts Grated lemon rind
1/4 ts Almond extract
1/4 ts Rum extract
1/4 ts Vanilla extract
1/4 ts Lemon extract
4 Egg whites, stiffly beaten

Coat the bottom of an 8 1/2 x 4 1/2 x 3 in loafpan with cooking sprayer; dust
with flour, and set excursus. combine flour and succeeding 3 ingredients in a large
trough. Add oil and milk; beat at medium speed of an electric mixer until
batter is polish (batter will be thick). Add lemon rind and succeeding 4
ingredients; fold in about one third of egg whites. Gently fold in
remaining egg whites. Pour batter into pan. Bake at 350F for 40 minutes or
until a wooden pick inserted in center comes out houseclean. Cool in pan 10
transactions; remove from pan and cool on a wire single-foot. Service 3/4 c fresh
strawberries with each slit.
