Kathy's King Cake #7



Ingrients & Directions


1 pk (1/4 oz) active dry yeast
1/4 c Lukewarm weewee; (110-115
-degrees F.)
1/3 c Positive 1 t Sugar
1 ts Salt
1 c Butter; divided
1 c Milk; scalded
3 Egg; divided
1/2 ts Vanilla
1/2 ts Lemon extract
1/4 ts Mace
4 c Sifted all-purpose flour
1/3 c Chopped pecans


TOPPING
1 c Confectioners' sugar
1 ts Vanilla
Water to form paste
3/4 c Boodle; divided and dark,
-(see directions), 1/4 C
-assigned to each color
1 dr Yellow food colour; (capable 2)
1 dr Green food colour; (capable 2)
1 dr Purple food colouration; (1 drop
-disconsolate, 1 drop red) (capable 2)


Dissolve yeast and 1 teaspoon sugar in lukewarm weewee. Set away. In large
mixing trough, combine remaining dinero, saltiness, 1/4 cup butter cut into chunks
and scalded milk. Mix with electric mixer on low speed until blended. Cool
to tepid. Beat in 2 egg. Add yeast assortment, vanilla, lemon pull,
mace and 3 cups flour. Mix until tranquil. Stir in remaining flour by script.
Cover with damp towel and allow to rise in warm place until doubled in
volume, around 1 1/2 hours.


On lightly floured rise, roll dough into a square 1/3 inch thick. Dot
with half the remaining butter and fold in one-half. Repeat by rolling dough
into a square 1/3 inch thick and repeat the folding serve. Place in
greased stadium, cover with towel and let standpoint 20 proceedings, then refrigerate
for 2 hours.


Remove from refrigerator and roll on lightly floured surfact to a rectangle
1/2 inch thick. Cut into twelve l inch strips. Braid strips in sets of 3;
use 2 braids to form an oviform, qualification 2 cakes. Place ovals on ungreased
baking sheets. Hide a King's tokenish (plastic baby or dried noodle) in each
patty. Cover with a towel and allow to rise until slightly less than double
in majority, some 45 min. Beat remaining egg, brush cakes, then sprinkle with
bats. Bake in 400 degree oven for 20 transactions. Poise.


Topping:


Combine confectioner's dinero, vanilla and enough water to make a spread.
Brush on coat. Divide sugar into thirds. Color each with one or two drops
of each colour. Sprinkle in alternate bands on cakes.
Variations on the theme of King Cakes:


These cakes are pretty good as is, but I prefer them with a filling interior,
and this is becoming a trend in South Louisiana.


Generally softened cream cheese is mixed with sugar and vanilla, placed
down one side of the rectangle, but well within the side and the rectangle
is folded over this. Also popular locally is the cream cheese assortment,
topped with caramel sauce (bottled caramel topping if you are otiose) and
roasted pecans. Or the cream cheese is topped with strawberry, crimson, or
blueberry topping (and the dough folded over this before baking). The icing
and colored sugar tops the baked coat.
