Light Plum Cake



Ingrients & Directions


8 oz Flour
4 oz Brown sugar
4 oz Butter
2 Egg; beaten
3 tb Milk
2 oz Currants
2 oz Raisins
2 oz Strip; mixed
1 ts Bicarbonate of soda
2 ts Spicery; sundry


Set oven to 375?F or Scar 5. Grease a 7 inch round cake tin and line
with greaseproof theme. Cream the fat and sugar together in a stadium.
Sift together the flour, mixed spice and bicarbonate of soda and adjoin,
alternately with the beaten eggs and the milk, to the creamed
assortment. The mixture should be quite damp. Mix in the fruits.
Transfer to the tin and bake for 1 1/4 hours, reducing the heat to
350?F or Scar 4 afterwards 30 proceedings. If the top starts to dark-brown, cover
with hydrofoil. When cooked turn out on to a wire rack and allow to poise.
