Beat cheese until light and fluffy. Append 3/4 cup sugar and beat anew. Add
eggs one at a time; beating after each. Add sour skim. Mix swell. Add
remaining sugar to melted coffee. Mix one cup of cheese mixture into
umber. Pour cheese mixture into pan. Drop spoonfuls of chocolate
mixture onto top and swirl with tongue. Bake at 425 for 15 minutes with a
pan of water on the bottom rack of oven. Reduce temp to 250 and broil 1 hour
thirster. Run knife around edge of coat. Chill. Top as desired. Version: Use
semi-sweet mint chocolate chips and add full 1 cup of sugar formerly.
