2 c Mashed potatoes; left-over
1 c All-purpose flour
1/2 c Maui onion; minced
1 lg Island egg
Salt and peppercorn; to discernment
I often fix Potato Pancakes for breakfast using leftover mashed potatoes.
BTW, I always use Idaho potatoes, milk, butter and salt for my mashed
potatoes. Next morning I take the leftovers (say astir 2 cups) sum 1 cup of
flour, 1/2 cup minced Maui onion, and an egg. I drop them by heaping
tablespoons onto a hot skillet to which I've added butter and/or olive oil.
I reduce the heat to medium and allow them to brown on one english. When I
flip them I salt and pepper and wait for the other side to brownish. They are
delicious and a family favourite! Love! Me ke ciao, Mary
