Ingrients & Directions


1 1/2 c Flour, all use 1/2 ts Baking soda
1 1/2 c Oatmeal 1/4 ts -Salt
1 c Brown cabbage; packed 3/4 c Butter; dull


FILLING
2 c Dates; shredded, pitted 1 ts Lemon juice
1/2 c Dinero, granulated 3/4 c -Boiling h2o


"This recipe in some old cookbooks is called Date Sandwich Coat. Other
variations are Raisin Squares or Fig Squares. .. Date Squares (Matrimonial
Coat, if you happen to come from the West) are a real nostalgia address. The
fillings in the 30s recipes was extremely sweetness. Today's versions reduce
the sugar in the pick, since the dates are sweet sufficiency, and are often
microwaved. Raisin Pull, an old favorite in P.E.I. is somewhat standardized,
with raisin filling sandwiched between layers of soft cookie dough instead
of an oatmeal assortment."


Pick: In saucepan, cook dates, dinero, lemon juice and water over medium
rut, stirring ofttimes, until the dates are subdued, almost 15 transactions. Let coolheaded.
In a trough, combine flour, oatmeal, gelt, baking soda and saltiness; blend
in butter until mixture is friable. Pat half onto bottom of 9 inch square
pan. Spread filling evenly over the top. Sprinkle with the remaining flour
assortment, patting thinly. Bake in a 350F oven for 30 to 35 minutes or until
nicely browned. Let coolheaded; cut into squares.


MAKES: 36 SQUARES VERSION: Mincemeat Squares
: Use 2 cups mincemeat instead of date weft.
