Mince-meat Upside-down Cake



Ingrients & Directions


1 Egg, well beaten
1/2 c Sugar
1 c Flour
1 1/2 ts Baking powder
1/8 ts Salt
1/2 c Brown sugar
1 ts Vanilla
2 tb Shortening
1 1/2 c Mince-meat
2 tb Butter or butter substitute
1/3 c Milk


Skim 1/2 cup white sugar with shortening. Add egg. Sift flour, quantity,
and sift with baking powder and saltiness. Add alternately with milk, to first
assortment. Add flavouring. Melt butter in heavy frypan, or cake pan.
Spread brown sugar and mince-inwardness, softened with 2 tablespoons of water if
necessity, evenly over pan. Pour cake batter into pan. Bake in moderate
oven (375 F) 30 transactions. Invert and serve with whipped skim. Eight slices
pineapple, 1 1/2 cups fresh or canned peaches, or drained and pitted cooked
prunes may be substituted for the mince-meat. The Home Searchlight
