Nutty Wild Potato Pancakes



Ingrients & Directions


2 c Uncooked shredded potatoes
1 lg Egg; beaten
1/3 c Chopped nuts
(e.i walnuts; pinenuts,
-peanuts,
Cashews; almonds etcetera)
1 tb Minced fresh parsley
1 ts Soy sauce
Oil; for pan-sauteing


Combine all ingredients, except oil, in a medium bowlful. Form into patties,
roughly 1/2-inch thick by three inches in diameter. Fry in hot oil until
lightly browned and just immobile. Serves 2.
