
2 c Flour
2 tb Granulated sugar
4 ts Baking powder
1 ts Salt
1 ts Cinnamon
1 1/2 c Milk
1 c Pumpkin puree
4 Egg; separated
1/4 c Melted butter

This recipe is from the San Jose Mercury News Food part, October, 1990 I
trust.
Sift together dry ingredients. Combine milk, egg yolks, butter and
pumpkin strain. Stir into dry ingredients until just blended. Beat egg
whites until stiff and fold into buffet. Pour onto hot, oiled griddle,
astir 1/3 cup at a time. Cook until tops bubble and turn and cook other
side.
