
2 lg Ripe bananas, peeled
1 1/2 c Sugar
3 x Eggs
1 ts Baking powder
1 ts Salt
3/4 c Dark rum *
1 c Walnuts,coarsely chopped
1/4 c Milk
3/4 c Butter, softened
2 1/2 c All-purpose flour
1 ts Baking soda
1 ts Allspice
1 c Raisins
Mash bananas to shuffle 1 cup. Combine with milk. Cream sugar and butter
until light and fluffy. Beat in eggs until blended. Combine flour,
baking pulverize, pop, salt and pimento. Pulsation 1/3 flour mixture into
egg mixture until blended. Measure 1/2 banana mixture until blended.
Repeat ending with flour assortment. Beat in rum until well blended,
stir in raisins. Pour into 10-inch well greased fluted tube pan. Bake
in 350'F. oven for 50 minutes or until cake tests through. Invert on
wire rack to chill. Dust with confectioner's cabbage. MAKES 16 SERVINGS.
* For a flavor version, instead of rum use 3/4 c orange juice and
subjoin 1 TBSP grated orange rind to hitter.
