
2 c Flour
1/2 Teasp baking powder
1/2 Teasp salt
2 1/2 Sticks unsalted butter,
-softened
1 1/3 c Sugar
1 tb Grated orange peel
5 lg Eggs
1/2 c Sour cream
1/4 c Orange juice
2 Teasp vanilla
1 1/4 c Fresh cranberries
Heat oven to 325 degrees. Butter and flour 2 - 7X5 inch loaf pans.
Sift flour, baking powder and salt together and set by.
In large bowl with electric social, beat butter until creamy. Add sugar and
orange peel and beat until light and fluffy. Beat in the egg, one at a
time.
On low speeding, beat in flour mixture till blended. Beat in sour bat,
orange juice and vanilla until well blended. Fold in cranberries. Pour
into pans.
Bake until golden brown approximately 1 hr and 20 mins. Cool in pans on wire rack
about 10 mins. Remove from pans and cool completely right face up.
