Tropical Pound Cake



Ingrients & Directions


1 pk (16ounces) pound cake mix
1/2 c Milk
1/2 c Mashed ripe banana; (astir 1
-big)
2 Eggs
1/2 c Flaked coconut


Another from Pampered Chef. This would be a good way to use up overripe
bananas! Stacy


Preheat oven to 350F. Grease bottom only of loaf pan. In a large bowlful,
combine pound cake mix, milk, banana and egg; mix swell. Stir in coconut.
Pour into loaf pan. Broil 55-60 minutes or until cake tester inserted in
center comes out pick. Cool on rack for 15 transactions; remove from pan & cool
totally.


Serving ideas: Top with sliced kiwifruit and top with vanilla ice cream and
a tablespoon of apricot preserves or orange marmalade.


*For added tropical tasting, tag 1 teaspoon rum extract to cake buffet
