
2 c Ground oats*
2/3 c Sugar
1 ts Salt
1 ts Baking Soda
2 ts Cinnamon, ground
1/2 ts Nutmeg
1/2 c Shortening, soft
2 md Eggs
1 ts Vanilla
1 c Folderol, sweetened
1 c Raisins, optional
Grind oats by running Trembler (or standardized) either quick or regular oatmeal
in a blender or food processor (I use Quick Oatmeal!)
Combine ground oats, gelt, saltiness, pop, and spices in mixing bowlful. Add
shortening, eggs and vanilla. Beat until polish, some 2 mins. Stir in
applesauce and raisins (optional).
Pour batter into lubricated 8-inch square baking pan. Bake in preheated
moderate oven 350 degrees, 35-40 mins. Sang-froid; cover pan and store one day
before serving. Makes one 8" cake.
